I am having the toughest time balancing life right now. I am keeping up on household duties, babysitting children and all of that, but photography and blogging are falling on the back burner.

I refuse to give up though.

The kids both helped with dinner tonight.  We had Chicken Carbonara, which has been one of my favorite foods for a while.  It also is a killer leftover lunch.  ; )

While we were making dinner, I had the spaghetti noodles in a pile and decided to show them how to play pick up sticks with them.  Don't worry, they washed their hands!

By dinnertime I still hadn't taken a photo for the day. Will's friend works North of us and was passing through. He had wanted to stop for pizza but Will was already home cooking dinner, so I insisted he enjoy it with us. So, he did.

You may also notice my daughter missing.  She is staying with Grandma.  I pick her up tomorrow morning, and boy, have I missed her!  Cooking just isn't the same without her, you know?

Today I spent the day with my mommy for Mother's Day.  I knew I missed her.  But. wow.  I did not know how much.

It was so nice to relax, chat and enjoy my mommy's cooking.  She made us fried chicken for dinner.  As if that wasn't enough.  I got to take him the entire leftovers.  Which is pretty much everything you see here.   I have been munching on it the past few days, and boy is it yummy.

Thanks mama!  You're the best!

Fuji apples were on sale this week for 79 cents.  Needless to say, we bought a ton.  My husband and I both eat at least one a day.  Often the kids eat one, too.  Plus, we use them for lunches and snacks and things.

IMG_1754

I was never really an apple fan growing up.  I didn't realize I just didn't know how to pick them.  In all honesty, I still don't know how to pick 'em!

For some reason, they just taste so much better when my husband inspects them.

Bacon Sandwiches for ALL, most.

IMG_0706

This was a dinner I made a week, possibly two weeks ago, while we were babysitting some friends. It was unexpected, but it was a fun and easy meal.

Rawni did not want a bacon sandwich and I (though I normally don't) obliged and made her peanut butter and jelly only because we were short on (turkey) bacon.

It was a huge hit with all four kids. Robert's not much into bacon, yet and since it's not really healthy, I don't push it on him.

I, personally, forwent the whale crackers, but I did eat a bunch of orange (I don't normally, I am not a big fan of oranges) and I loaded up with a large serving of raw carrots, too.

Yummy!

That banner at the top of my posts is for a Mom Grant I am working really hard to win.  If you could vote for me over on Facebook, even just once (though you can vote daily), it would be so very helpful.  I'd like to use that money to fund my trip to BlogHer '11 and improve my blog, along with offering a few giveaway's for my wonderful readers!  Thank you, friends.

I think I can actually see some improvement in my food photography.  Nah, probably not. It's likely just because I shot this in more daylight that flash.  Dang it.

This is my new favorite Lean Cuisine Meal.  O. M. Geeeeeeeee.  It's like a Teriyaki Bowl ish deal.  It's got rice, almonds, chicken, broccoli, and the sauce is to die for.  All for only 5 points.

This shot is SOOC (straight of the camera).  I am entirely too tired and lazy wanting to go watch a movie with my husband but needed to get my WW up first.  :p

Still working on improving my quality of food photos.  I learned a new trick yesterday when taking these photos of dinner.
IMG_0736

I think the other shot I took was a better photo, but since I couldn't get enough of that asparagus, I can't not include it in my Project 365.  Yum!

A lot of times I mess around with my camera to just test settings. I never intend to really share a lot of the photos I take.

But then, I don't take any others that day, so it gets "named" Project 365 file.

Voila, a strawberry.

They were on sale, and I've been craving them. But I have to say, they weren't that great. Is it fruit season yet? I want some grub.

Grapefruit's are on sale right now. Can you guess what I am eating? Okay, I am not right now because I've been editing playing with my photos.

But, as soon as I post this, you can be sure you know what I am eating. Yum!

How do you eat grapefruits? In my family, we cut them in half, sprinkle each half with a pack of equal and then spoon them out. I like to cut mine with a knife before, because I am anal precise like that.

Cheerios!

Robert's high chair is always covered in cheerios. Typically, so is the floor around it.

When I went to the library this week, my husband and I had seven DVD's ready for pick up.  Seven?!

They just changed the DVD checkouts back to seven days (they had moved it up to 3 weeks).  Well, of course all of the movies had been ones that have been in our queue for a while and all came in at the same time.  (That never happens.)

So, I suggested we'd make a fun game of it and do a "movie marathon week", so we are!  Except we failed last night when I stayed out late with a friend. Shucks.

Anyways, Wednesday we watched Eat Pray Love.  I'm thinking about doing a review on it, but I'd probably want to watch it again to more closely inspect.  Since I read the book, I really wanted to see this one.

After watching it though, I was dying for some rich unhealthy Italian food.  Where else could I head but to Olive Garden?

So, today I went to dinner with a friend and enjoyed a rich, fatty, unhealthy and over carb'd dinner.  Fantastic.

I just can't decide if I like this photo better
IMG_0240

or this one?
IMG_0243

This is their version of Chicken (and Shrimp, that I had ordered on the side) Carbonara.

I have only eaten this meal 3 times.  Once at a friend's, then when I made it (recipe here), and now Olive Garden.  But, I think I've found a new favorite.

Also, can someone tell me why my photos seem so dark when I am photographing food?  When I lighten them up, they seem to be overexposed.  What's the deal?

Raisin Toast

If you like Raisin Toast, and you've never tasted Trader Joe's, you're missing one of the best things around.
IMG_0247

After I had Robert, I had a friend (and mother from the local Mother's Club) bring me a bag of groceries from Trader Joe's.

In this bag was several items that have become favorite grocery musts.  This toast is one of them.  It is thick like French Toast Bread or Texas toast.  Besides that, the flavor is to die for.  Now, I don't like raisins, but for whatever reason, I can eat them in a nice warm piece of Raisin Cinnamon Bread topped with butter.  Yum!

Macaroni & Cheese... with a twist!

My daughter's favorite food in Macaroni and Cheese.

Friday for lunch she made the request and it had been a while since we had any, so I of course, obliged.

Any guess as to what the "chunks" are in this batch?
IMG_0238

If you guessed homemade baby food puree ice cubes, you're good!

Back when William was an infant, I made all of his baby food. Then, I started getting creative and we started eating healthier. I would throw ice cubes of spinach in our sauces or spaghetti. Squash is excellent in a soup that got a little too hot (fajita soup or chicken noodle are my favorite's).

Then, my Gramma bought me Deceptively Delicious and it became even more of a habit.

Rawni often requests "pink oatmeal" (aka oatmeal that is cooled off with pureed beet ice cubes).

For this macaroni and cheese, I added spaghetti squash. It's not my favorite, I prefer butternut, but we have more spaghetti right now.

Rawni saw me put in so she whined "But I don't like that stuff you put in your soup!" To which I replied "Fine, next time I will put it in when you don't see! You do realize I add this everytime I make your macaroni and cheese and you never notice, right?"

Silly children.

Vanilla ice cream is probably my first/second favorite ice cream. That and Mint Chocolate Chip from Baskin Robbins.

What's yours?

The kids asked for pizza for dinner yesterday, so Will brought some spinach to work this morning and brought us home veggie for the adults and cheese pizza for the kiddos. (If you aren't familiar, my husband owns his own pizza franchise.)
IMG_9870

The kids used to eat veggie pizza with us, but it was short lasted.

This photo was taken in a hurry because I hadn't eaten lunch and was hungry, and had guests over, so I didn't feel like spending time focusing on how to take a nice picture of my pizza, or anything else.

For lunch today I had a large Mediterranean salad loaded with extra spinach. Yum!  The cranberries are my favorite part!
IMG_9674

Funny story behind this, I wouldn't even attempt to try these sorts of things a few years ago.  In fact, after I had Rawni someone brought us a bag of this stuff and we threw out the 'fixin's' and used regular ol' dressing.  What a shame.

Now I am addicted and anytime this stuff is one sale, I must buy a bag.

To see what I had for dinner today, click over the my facebook page and you'll get a sneak peek!  Tomorrow the recipe will be up.  It was a yummy food day here!
